Hyderabadi chicken biryani recipe is simpler than the dum biryani because you don't need any special process to cook this. You just need to mix all the mentioned ingredients and cook with the slow dum process. For getting desired taste and flavor all you need to trap the steam. Trapping steam provides the special fragrance to Biryani. 
Before getting the recipe of the Hyderabadi chicken biryani, just take a look at the things about biryani. Biryani is an Indian origin dish. You can found this dish in all parts of India. This was the part of Emperor's meals since the 16th century. It is considered that its the recipe of the Nizam who was the ruler of Deccan. When we searching for biryani we found that there are more varieties of biryani in the south of India. During Nizam rule, Iranian and Mughlai cuisine was admixed in the kitchen and from this mixture we got new recipes. Hyderabadi chicken biryani is one of them. Usually, biryani is served with the green chili curry and mixture of yogurt, mint & onion which is known as Dahi chutney.

Types Of Hyderabadi Biryani:

Depend on the process of cooking we can found that there are two types of Hyderabadi biryani they are known as follows
:
1. Kachchi Biryani (means Raw biryani)
2. Pakki Biryani (means cooked biryani)
3. Vegetarian Biryani

Kachchi Biryani: For making this biryani at first you need to cover the meat with a mixture of ingredients for a night and then this meat socked in the yogurt before cooking. Then do the layer this meat in between the layers of rice in the cooking pot which is covered with dough and cook in on dum which means steam over coals.

Pakki Biryani: The process of making this biryani is completely different from Kachchi Biryani. The meat is put in a mixture of ingredients for a shorter time. Then this meat is cooked before making the layered meat in between the layers of rice in the cooking pot which is covered with dough and then it will be cooked on dum.

Vegetarian Biryani: In the vegetarian biryani, vegetables such as carrots, peas, cauliflower, and potato are used with cashews instead of meat.

Ingredients needed to make Biryani:

  • 1 kg chicken ( skinless and boneless chicken breast) (cut in bite-size).
  • 1/2 kg Basmati Rice.
  • 1 cup mint leaves.
  • 1/2 cup coriander (finely chopped)(for garnishing ).
  • 2-3 onion (sliced).
  • 150-175 ml Oil
  • 10-12 strands Saffron. 
  • 1/2 cup milk (about 150 ml).
  • 2-3 teaspoon ghee. 
  • salt  ( to per taste).

Ingredients needed for the marinade

  • Chili powder (as per taste).
  • 2-3 fresh green Chilies (chopped).
  • 2 cups yogurt.
  • 3 teaspoon lemon juice.
  • 1/2 cup coriander ( finely chopped ).
  • 2 teaspoon ginger and garlic paste.
  • 1 cup crushed onion.

  • 8 -10 cloves. 
  • 1 medium-size Cinnamon stick
  • 1tespoon  black pepper.
  • 4 to 5 green cardamom.
  • 1 black cardamom.

  • 2-star anise.
  • 2 bay leaves.
  • 2-3 cardamom.
  • 1 stick cinnamon.
  • 4 cloves. 

Directions for Cooking Biryani:

  1. Put the saffron in the milk and keep it aside for soaking
  2. then make a fine powder of spices in a grinder (cloves, cinnamon, black pepper, green cardamom, and black cardamom)
  3.  Take some oil and heat it. Then fry the onions in it till it gets golden brown color. Then remove it out in the plate to get cool.
  4. Now take the chicken in a large bowl and mix the ginger-garlic paste and nicely rub the paste to chicken pieces.
  5.  After this add some Ingredients in chicken, they are chili powder, green chilies, crushed onion, yogurt, lemon juice, the ground spices, mint & coriander half of mentioned and oil (use oil in which onion was fried). 
  6. Mix all this properly and keep it aside for 3 hours.
  7. After 3 hours, take this mixture in the pan and keep t on medium heat. Cook it until the chicken is tender.
  8. Take about 2 glass water and boil it. Then add bay leaves, cinnamon, cloves and cardamom and star anise in it. After all, these add rice with the little salt as per taste in it and Parboil this rice.
  9.  Then get drain out this rice from the pot and spread in the plate.
  10. Then take another pan and add the layer of ghee on the bottom of the pan.
  11. Make the two parts of Rice. Then in the bottom of the pan add the layer of rice then cover this layer by the cooked chicken. After this again cover this chicken by remaining part of rice ( sprinkle fried onion to each layer ). 
  12. Then Sprinkle the saffron milk and balance mint and coriander over the rice after this pour the ghee over the rice.
  13. After completion of this process put this pan on slow fire before this makes sure that pan gets sealed tightly. After rice gets fully cooked (do not overcook the rice) remove the rice with care from the pan. Make sure that rice and chicken did not get mixed.
  14. Now your Hyderabad chicken biryani is ready to serve.
