
Some people like asparagus, and others don't. For those who do, this meal might be a welcome treat. This version contains some spices, but is fairly mild overall. If you want more kick in the recipe, try adding something like ground pepper, or chili pepper slices.
This chicken and asparagus recipe serves 2 people.
Time required for preparation and cooking is roughly 40 minutes.
Ingredients
2 tbsp. olive oil or other oil of preference
3 tbsp. butter (or margarine)
1/8 tsp. oregano, dried
1/2 tsp. parsley, dried
1/2 tsp. basil, dried
1/4 tsp. salt
1 1/2 garlic cloves, minced
2 tsp. lemon juice (can be fresh or from a container)
1 1/2 tsp. white cooking wine
2 chicken breast halves, sliced (boneless and skinless)
1/2 lb. asparagus, fresh, trimmed, cut into about five pieces
Directions
Add the butter and oil to a frying pan over medium-high heat until the butter melts. Then, mix in the next seven ingredients on the list, and stir the mixture together. Add the two chicken breast halves, and stir frequently until they have turned brown (a few minutes). Lower the heat to medium, and allow the chicken to cook longer until it is thoroughly done (roughly 10 additional minutes). Next, place the pieces of asparagus in the recipe, and continue to stir while allowing the asparagus to cook, until it becomes tender and turns bright green.
