mouth-watering Indian dish introduced by Mughals to the Indians. Actually, this recipe is made in a pressure
cooker or pot. This chicken biryani recipe is one of the amazing royal Indian food
served on no occasion, parties, weddings, birthday parties and especially in
the Eid festival. To make authentic dum chicken biryani it takes some time as
well as it needs some expertise. I enjoy this recipe as a breakfast, lunch, and
dinner, sometimes I store chicken biryani overnight in the fridge and the next
morning reheated and eaten with the same fervor as the previous day. It is
simple, spicy and aromatic rice in this post I have shared the dum chicken
biryani method which very simple and it tastes very delicious. it is an Indian
aromatic and seasoned one-pot dish.

Tips To Make Perfect Biryani At Home
- To make perfect, spicy and aromatic chicken biryani use good quality basmati rice, fresh spices, chicken and ghee.
- Use premium quality basmati rice for best result and this kind of rice firm and spread in chicken biryani without turning in talc.
- The biryani is made in a pressure cooker or in a pot (Rice is cook right without getting mushy).
- Use good quality whole spices and spices powder which gives a good flavor to chicken biryani.
Two Methods To Make Fluffy Rice.
Take
full-grain basmati rice.
Then wash the
rice in water.
Soak the
rice for 15-20 minutes in normal water( It helps to remove extra trash).
Methods
Using pot
(proper steam rice):-
- Add ½ liter water for 250 gms of rice.
- When water turns to boil then add a little bit of ghee, salt, soaked rice and boil it for 7 to 8 minutes.
- Then strain the rice trough the help of a strainer and spread the rice in the plate for cool.
Using
pressure cooker:-
- Heat the cooker and add ½ tsp oil or ghee, soaked rice mix for ½ minutes then add water, salt(if you take 1 cup water then add 1 ½ cup water in it ).
- Give two whistles of the cooker and remove all the steam of the cooker and open the cooker and spread the rice in the plate for cool.

Ingredients
for marinating chicken
- 4 tbs yogurt.
- ½ tsp red chili powder.
- Salt ( for taste).
- ½ tsp turmeric powder.
- 1 tsp garam masala powder.
- 1 tsp ginger garlic paste.

for main chicken biryani
- 1 kg basmati full-grain rice.
- Salt (add as per taste).
- 3 tsp coriander powder.
- 2 tsp ginger garlic paste.
- 300 gm onion.
- 2 tbsp tomato puree.
- 5 green cardamom, 1 black cardamom, 6 cloves, 7-8 peppercorn, 2 bay leafs, cumin, star anise.
- 2 tsp red chili powder.
- 1 tsp turmeric powder.
- 1 tsp garam masala powder.
- 2 tbsp refined oil.
- 2 tsp ghee.

Method I –
for marinate
- For marinate chicken add yogurt, red chili powder, turmeric powder, salt, ginger garlic paste and garam masala mix all the mixture well and keep a chicken for 10-15 minutes for marinate.

2. Allow to rest chicken for 15 to 20 minutes for marinate.

Method II -
for making rice
- Take full-grain basmati rice to wash it and soak it for 15 to 20 minutes.
- Then take one pot add water in that and then salt and spices like green cardamom, black cardamom, 6cloves, peppercorn, bay leafs, star anise and wait until it boil when water turns to boil then add washed and soaked rice in it and cook the rice on high flame for 5 to 6 minutes(Cook the rice until 70% done).
- After that switch of the flame and strain the water from rice through the help of a strainer.
3. Basmati rice wash it and soak it for 15 to 20 minutes.

5.add washed and soaked rice in it and cook the rice on high flame for 5 to 6 minutes(Cook the rice until 70% done).

Method III –
for giving dum for rice
- For giving dum take a heavy bottom pot and add ghee and oil together once ghee and oil get heat then add ginger garlic paste and chopped onion fry until it starts to pick the golden color. then add marinate chicken with coriander powder, garam masala powder, red chili powder, turmeric powder and some whole spices like bay leafs, cardamom, cumin seeds mix all the mixture and cook chicken for 6-7 minutes.
- Then spread the chicken and over the chicken spread the rice which has been strained and finally garnish the biryani with coriander leafs , mint leafs, saffron flavored milk and lemon extract and fried onion and cover it with lid and place the Tawa on gas and put the biryani pot on Tawa and give dum for biryani for 10minutes on high flame and biryani for 20 minutes on low flame.
- Then switch off the flame and biryani is ready to eat.
- Serve the biryani with papads or onion raita.
6. Add chicken with ginger garlic paste and chopped onion, marinate chicken with coriander powder, garam masala powder, red chili powder, turmeric powder and some whole spices like bay leafs, cardamom, cumin and mix well.
7. Then spread the chicken and over the chicken spread the rice which has been strained .

8. Finally garnish the biryani with coriander leafs , mint leafs, saffron flavored milk and lemon extract and fried onion.
