Bombay Style Chicken Biryani Recipe

Bombay it the official name of the city Mumbai till 1995. It is the most important metro city of India, also it ts the capital of the Maharashtra state. This city offers you a cosmopolitan and diverse lifestyle with a variety of food. Since Mumbai is the major trading center of India, it has led to a diverse range of cultures, religions, and cuisines coexisting in the city. 

Roadside fast food is popular in the city. Vada pav is the most popular in the city along with this Pav bhaji, bhelpuri, panipuri and dabeli are some Maharashtrian fast foods are popular. Also South Indian and Chinese food are popular in the city. Tea, coffee, fruit juices and coconut water are popular drinks of Mumbai.
You can found a mixture of cuisine styles in the city. Mumbai developed some dishes in a new style. Bombay chicken biryani is one of them. It is a very flavorful and aromatic biryani prepared from Indian spices and chicken.

Bombay Chicken Biryani Recipe:

Ingredients for Biryani:
  • 1 kg of chicken breast (bite-size pieces). 
  •  1 kg Basmati Rice.
  • 4 potatoes.
  •  6 tomatoes.
  • 4 medium onions. 
  • 1 bunch mint. 
  • 6 green chilies. 
  • 1 1/2 tsp ginger-garlic paste. 
  • 1 cup dried plums. 
  • 1 tsp red chilies powder. 
  • 2 tsp coriander powder. 
  •  6 peppercorns.
  • 4 cloves. 
  •  6 cardamoms.
  • 1 tsp cumin seeds. 
  • 1/4 tsp yellow food color. 
  • 1 cup yogurt. 
  • 1 cup of milk.
  • 1 cup ghee/oil.
  • 2 tsp lemon juice. 
  • Salt as per taste.


Directions for cooking Bombay Chicken Biryani:

  1. Add chicken in the pot with yogurt, ginger-garlic paste, coriander, red chili powder, green chilies, mint, lemon juice, plums, and salt.
  2.  Stir this until it mixes properly. Then keep this aside at least for an hour.
  3. Cut the onion and fry it in a pan until its color gets golden brown. Then get the half of fried onion on tissue paper.
  4. Now add the chicken mixture in the pan and cook it on low heat until the liquid gets dries. The fry little more and remove from heat.
  5. Take the potato and tomatoes. Cut the potato in large slices and tomato in quarters. Then fry them separately in oil and use it to prepare the curry.
  6. Wash the rice and soak it in water for 15 minutes. Then add it in boiled water with cloves, cardamom, pepper and salt. 
  7. When rice gets half cooked drain out the water from it.
  8.  Now take a large pot and add little oil in it. Make the layer of half of the rice, then the layer of curry with chicken on it. On the top make the layer of remaining rice on it.
  9.  Pour the warm milk on it. 
  10. Then cover the pot in such a way that the pots get airtight. Put it on low heat until the chicken and rice get well cooked.
  11. Here your Bombay biryani gets ready. Serve it hot with raita.
