About Keto Mini Chicken Pot Pie
There are two parts while making mini chicken pot pie one is
filling and second is a crust
- Filling
The filling is a mixture of chicken breast (diced), carrot,
celery, onion, peas, heavy cream, chicken stock.
- Crust
Crust includes almond flour, coconut flour, baking powder,
thyme, eggs, butter, and mozzarella.

- Preparing mixture for filling
- Preparing for a crust.

Preparing The Mixture For Filling
Here
are some steps to make a mixture for fillings. These steps are as follows
Step
1 - Take one pan and heat it on medium flame once the pan is hot then add 1
tbsp butter and add chicken breast which is diced and cook it until it turns in
golden brown color then add salt and pepper and sauté it for a minute and
remove chicken in a bowl and keep aside.
Step 2 - Add 1 tbsp butter in a
pan then add carrot, onion, celery, and thyme and stir it and add chicken stock
and heavy cream and paprika and mix all the mixture and then add chicken breast
and mix it.
Step 3 – Then add green peas,
salt, and pepper for taste and stir it nicely and cook for 2 to 3 minutes and
switch off the flame and keep it aside.
Preparing For Crust
Step
1 - Take one large bowl and add almond flour, coconut flour, baking powder,
salt and thyme add mix it well then add eggs mix all the mixture and keep it
aside.
Step 2 - Take one skillet and
heat it on medium-high flame once it hot then add 10 tbsp butter and grated
mozzarella cheese and stir it constantly until butter and cheese melted.
Step 3 - After that remove it
from heat and add flour and egg mixture in butter and cheese mixture and mix it
well.

Step
1 - Preheat oven for 350 degrees
Step 2 - Remove the mixture in
parchment paper and kneed it to completely mix in the flour mixture.
Step 3 - Give log shape to the
dough and divide it into 1/3rd and 2/3rd parts.
Step
4 - Make 12 equal parts of 2/3rd dough and part roll in parchment paper with a
rolling pin and make a circle.
Step 5 - Then place the circle
into a cup on the muffin tin.
Step 6 - Stuff the filling in
the bottom crust of the muffin cups and cover the cups with another circle and
seal the edges.
Step 7 - And lastly poke the 3
to 4 vents on top of each pot pie by using a knife and place the muffin tin on
a cookie sheet and bake the pot pie for 15 to 20 minutes on 350 degrees.
