Chicken sukka recipe is a chicken dry item cooked with masala paste of whole spices and ground coconut paste. Chicken sukka has state-wise variations (For example- kundapur chicken sukka, Mangalorean chicken sukka and Kolhapuri chicken sukka ).
Mangalorean chicken sukka is also known as kori chicken sukka is a dry Indian chicken dish made with grounded coconut paste, grounded whole spices paste, fresh chicken. This is one of the favorites and popular chicken dish of any Mangalorean.

Ingredients needed to make chicken sukka recipe
Main ingredient
- 1 kg boneless and skinless chicken breast ( sliced in bite-size pieces ).
Whole spices
- 1 teaspoon of cumin seeds.
- 2 to 3 cinnamon sticks.
- ½ teaspoon black paper seeds.
- 1-star anise.
- 2 teaspoon sesame seeds.
- 3 green cardamom & 1 black cardamom.
- 5 cloves.
- 2 tbsp coriander seeds.
- 1 tsp oil (to roast the spices ).
Ingredients for coconut paste
- 2 cup grated coconut (1 cup for paste and 1 cup grated to add at last).
- 1 roughly cut onion.
- 5 to 6 garlic cloves.
- ½ teaspoon ginger (finely chopped).
Other ingredients
- 1 teaspoon Butter.
- 1 teaspoon oil.
- 1 onion chopped.
- 1 tsp fenugreek seed crushed.
- 4 teaspoon chili powder.
- 1 tsp turmeric powder.
- 3 tbsp tamarind juice.
- Salt to taste.
- Coriander leaves ( finely chopped )(for garnishing).
Step By step process to make chicken sukka
Step 1 make a coconut paste
- Take 1 cup grated coconut, 1 roughly cut onion, 5 to 6 garlic clove, ½ teaspoon ginger (finely chopped) .
- Add all the above ingredients in grinder and make a fine paste.
- And keep it aside.
Step 2 make a spices paste
- Firstly heat the pan on medium flame and then add I teaspoon oil in it once the oil getting hot then add all whole spices one by one.
- And roast it on a medium flame for 5 to 6 minutes ( until it lightly golden brown).
- After that remove all whole spices in a grinder and make a fine paste.
Step 3 Final recipe
- Heat the pan and add butter & oil (1 teaspoon each) once the butter melted then add 1 finely chopped onion and cook it for 2 to 3 minutes stirring continuously.
- Then add 1 tsp fenugreek seed crushed, 4 teaspoon chili powder and 1 tsp turmeric powder mix it.
- After that add chicken and mix it
- Add ½ a cup of water and cook it for 10 to 15 minutes on medium flame by covering lid.
- After that add 3 tbsp tamarind juice and mix it well.
- Then add spices paste and coconut paste mix it well then add salt (for taste) mix it well and cook the chicken with spices paste and coconut paste for 3 to 4 minutes on medium flame stir continuously.
- Lastly add grated coconut in it mix it well.
- Mangalorean chicken sukka is ready to serve.
- Sprinkle finely chopped coriander and serve it with roti, naan or paratha.
