Kolkata style chicken biryani recipe is one example of Bengali cuisine. The Bengali cuisine style is Bengal which was part of eastern the Indian subcontinent. Now a day's it is divided into Bangladesh and some western states of India (West Bengal, Tripura, and some regions of Assam). Bengali cuisine mostly includes fish, Rice, vegetables, and lentils.
When we compare the ordinary food in the home and the food in social function/festival in Bengal, we found that they are very different. The surprising thing Bengal food is the food served in the large gathering such as marriage functions is even different from both. Almost all the community in Bengal eats meat and fish. This is different because in the Indian subcontinent there is own different food habit for individual communities and castes but for Bengal, this sentence becomes fail. Fish, chicken, and meat are eaten across all social stratum. But the beef is only restricted for Muslim communities.

Ingredients needed to make Kolkata Chicken Biryani:
  • 750 gm Skinless and boneless chicken breast (cut it into bite-size).
  • 400 gm basmati rice.
  • 2 large size potato. 
  • 4 boiled egg.
  • 3 Onion medium size.
  • 3-4 tsp yogurt. 
  • 1 tsp ginger-garlic paste. 
  • 1 tsp lemon juice. 
  • 1 tsp red chili powder. 
  • 1/2 tsp white pepper powder. 
  • 1 1/2 tsp Biryani Masala. 
  • 5-6 cloves. 
  • 5-6 green cardamom.
  • 2-3 dried plum (you may skip if not available).
  • 2 tsp milk powder. 
  • 1/2 tsp rosewater. 
  • 1 tsp saffron.
  • 1 coffee cup milk. 
  • Salt to taste.
  • 3 tsp ghee. 
  • Oil.
  •  1 cup wheat flour.

Step By Step Process To Make Kolkata Style Chicken Biryani:
  • At first marinate chicken with ginger-garlic paste, yogurt, chili powder, white pepper powder, biryani masala, kewra water, 1 tsp cooking oil, and salt. Keep this aside for a minimum of 3 hours if you are able to keep it overnight then it's better.
  • Cut the potatoes in two halves before that peel them. Add the layer of salt and turmeric power on it and half boil them. You can also fry them in oil till they get half cooked.
  • Take the boiled eggs to cover it also by the salt and turmeric powder and fry them in the 2 tsp oil.
  • Heat some oil in the pot over medium heat. When oil gets heated add marinated chicken in it. fry them until the oil gets separate from the mixture. Then add one and a half cup hot water in it and cover the pot. Let the chicken gets cooked about 75% then remove them from the pot and heat the gravy until it becomes 3/4 cup. Stir regularly when gravy gets heated.
  • Now Its time to prepare the rice. Take rice and wash it properly. Then keep it in cold water for 15 minutes.
  • Take a pan and boil some water in it. Once it gets boiled add rice with cloves, cardamom, and salt in it.
  • Half cook the rice and drain the water. Keep this aside.
  • Take wheat flour and water and make a soft dough from it.
  • Now that the heavy bottom pot and add the thin layer of ghee from inside. 
  • Put the gravy into the pot and then add chicken in it with the lemon juice, half cup milk, and remaining biryani masala. Mix them well.
  •  Now place the potatoes on the chicken and spread half of the rice over it. Then Spread saffron (soak in some milk for at least 15 minutes before this), milk powder, rose water, kewra water, and reaming ghee over it. After this spread the remaining rice over it.
  • At the top place the eggs over it.
  • Seal the pot with the lid and dough. Make sure that the air gets tight. 
  • Put the pot on the medium heat for 5 minutes and then on low heat for about 15. Make sure that the liquid at the bottom gets dried completely. Also, the rice gets fully cooked.
  •  Here's your Kolkata Style Chicken Biryani gets ready. Garnish this biryani with Mint leaves, Coriander leaves.
