How To Make Kerala Roast Chicken Recipe, Kerala Style Chicken Roast

In my family, everyone loves and is crazy about spicy and delicious chicken recipes and I am trying every weekend new chicken recipes for my family and I have tried last week this spicy, smoky, and delicious Kerala roast chicken and it is amazingly tasty.

In this recipe, chicken is marinated in curd and roasted with garam masala powder, onion, tomato, red chili powder, and coriander powder. The Kerala-style chicken roast recipe is perfect for weeknight dinners, small parties, and festivals. Kerala roast chicken recipe is a super simple and easy recipe made with simple ingredients and few steps. This Kerala roast chicken recipe is perfect for late-night dinners because it is ready in only 30 to 40  minutes.

Ingredients needed to make chicken roast Kerala style

main ingredient

  • 500-gram chicken breast with bones ( cut into bite size pieces ).

Ingredients for marinating

  • 1 small cup curd.
  • 1 ½ teaspoon ginger garlic paste.
  • ½ teaspoon cumin powder.
  • 1 teaspoon coriander powder.
  • ½ teaspoon red chili powder.
  • Pinch of turmeric powder.

Ingredients for the main recipe

  • 3 large onions ( sliced lengthwise ).
  • 1 tomato ( chopped ).
  • 2 green chilies ( sliced lengthwise ).
  • 1 teaspoon ginger-garlic paste.
  • 1 ½ teaspoon curry leaves.
  • 1 teaspoon of coriander powder.
  • ½ teaspoon of turmeric powder.
  • 2 ½ teaspoon red chili powder.
  • 1 teaspoon garam masala.
  • 1 teaspoon mustard seeds.
  • 2 cloves, 1-star anise, 1 cinnamon stick ( crush together )
  • Salt ( as per taste )

Proces to make Kerala roast chicken

  • Firstly take one large bowl and add the chicken after that add curd, cumin powder, ginger-garlic paste, coriander powder, red chili powder, and turmeric powder and mix it well.
  • Then cover the chicken and keep it 15 to 20 minutes for the marination process.
  • Now take one pan and hit the pan on medium-large flame and to then add 2 tablespoonss oil in the pan once the oil is getting hot add mustard seeds and wait for a second now add onion and green chilies and fry it on medium flame until onion turns golden brown.
  • Now add crushed masala saute it for a minute and then immediately add tomato and mix it well and cook for 2 to 3 minutes.
  • After that add marinated chicken and cook it for 15 to 20 minutes on high flame until chicken is fully cooked ( stir it continuously while cooking ).
  • Then add coriander powder, turmeric powder, red chili powder, garam masala powder, and lastly salt ( as required ) and mix it well.
  • Cook the chicken for 5 to 6 minutes until it feels like roasted chicken.
  • Delicious Kerala roast chicken is ready to serve.

Serving ideas

  • Serve this delicious and spicy  Kerala style chicken roast with naan, roti, chapati or paratha.

How to make chicken masala powder  at home

To make chicken masala powder we need some whole spices.

  • Coriander seeds.
  • Fennel seeds.
  • Fenugreek seeds.
  • Cinnamon stick.
  • Black peppercorns.
  • Cumin seeds.
  • Star anise.

Method  - Take all the whole spices together and heat the pan on medium flame and add whole spices in it roast the spices for a minute and remove them on a plate. wait for it until's cool. Then add the dry roast whole spices in a grinder and make a fine powder. your homemade chicken masala powder is ready.
