How To Make Ambur Chicken Biryani Recipe


Ambur is the town of the state of Tamil Nadu in India. It is the town on the bank of Palar river beside of Bangalore-Chennai national highway. You will found that rice is the  capital food of the people in this region. Its the reason that here you will get variety of the dishes made from the rice. This place is popular for the non-vegetarian dishes made by using mutton, chicken and egg in the form of kabab and gravy. Ambur biryani is of the non-vegetarian recipe from this place which is another popular Kolkata Style Chicken Biryani Recipe in biryani lovers. It was emerged as the army dish during the Nawab of Arcot's regime. Now days it is used as the main food in Muslim wedding and served with the kabab and sweet dishes.

Ingredients needed for Biryani  

  • 500 gm chicken breast ( sliced in bite-size).
  • 500 gm seeraga samba rice .
  • 1/2 cup oil. 
  • 1 large stick cinnamon.
  • 10 Cardamom pods. 
  • 10 cloves .
  • 1/2 cup curd / Yogurt.
  • 2 large onions. 
  • 2 tsp garlic paste. 
  • 1/2 cup coriander leaves. 
  • 1/2 cup mint leaves 
  •  2 tsp ginger paste
  • 2 large tomatoes ( thinly sliced).
  •  7-8 dry red chilies.
  •  10 Kashmiri red chilies.
  • Salt as per taste.


Directions for Cooking Ambur Chicken Biryani

  •  At first wash the seeraga samba rice properly and keep it for soaking for 15 minutes.
  • Soak the all red chilies in the hot water for 5 minutes. Then drain them and make the puree of it.
  • Heat  some oil in the pot. Once it gets heated then add cinnamon, cloves and cardamom. Fry them properly then add 1 tsp curd and little salt in it.
  • Now add the sliced onion in the pot after about 30 seconds of adding curd. And fry it till it turns to golden brown color.
  • Add garlic paste in it and saute it for 2 minutes.  Then add chicken in it followed by coriander leaves and mint leaves. Toss it for about 6-8 minutes on high heat.
  • When the chicken gets golden color add tomatoes and saute it for 2-3 minutes.
  • Add the red chili paste and stir it until the chicken mix well. Then add 1/2 cup curd with little salt. Mix them well.
  • After this cover the pot and leave it to cook on low heat for 10 minutes.
  • While during meantime take another pot and boil water required to cook rice.
  • Once water gets boiled add salt and rice in it. Mix it well. Then leave it to cook. Once the rice gets cooked 75%, drain it.
  • On other hand chicken gets cooked about 90%. Now make the uniform layer of it in same pot and make the layer of the rice on it. Also add little water in it.
  • Cover the pot tight lid and then put the pot on low heat until the chicken rice gets fully cooked and also it gets drained.
  • Now mix the chicken and rice properly. 
  • Here your biryani gets ready. Serve it with raita.

  • Serve this biryani hot with onion raita.
