Ingredients for biryani:

  • 1/2 kg chicken breast (sliced in bite-size).
  • 500 gm Basmati Rice.
  • 1tsp red chili powder.
  • 1/2 tsp turmeric. 
  • 1 tsp coriander powder.
  •  1 tsp cumin powder.
  •  2 Green Chilies (chopped).
  • 2 Onions ( sliced) Lengthwise.
  • 2 teaspoon ginger-garlic paste.
  • 2 cup of curd. 
  • 2-3 bay leaves.
  • 7-8 tsp oil or ghee.
  • 1 medium stick cinnamon. 
  •  2 cardamoms.
  • 4-5 cloves.  
  • 4-5 black Cardamoms. 
  • coriander leaves.
  • Mint Leaves.
  •  2 tsp shahi Jeera.
  •  2 Star Anise.
  • 2 tsp saffron (mixed with milk).
  • Salt as per taste.

Directions for Cooking Lucknowi (Awadhi) Style Chicken Biryani:

  1. Take Red Chili Powder, Turmeric, Coriander Powder, Cumin Powder, Green Chilies, Onion, Ginger garlic paste and Curd in a bowl and then add the chicken in it. Mix all these properly and then put it aside for at least two hours.
  2. Also, wash the rice and put it in water for one hour to soaking.
  3. Take a pot to add water in it then boil it for cooking rice. Now add rice in it and after this add Shahi Jeera, star anise and salt in it.
  4. Cook only 50% rice after this keep it aside don't cover the pot.
  5. Now take a kadhai and add ghee in it after it gets heated add Cinnamon, cardamom, cloves, coriander leaves and mint leaves in it. Now add marinated chicken and mix it properly. Then cook it for 15-20 minutes on medium heat. Also, take care of the chicken did not get fully cooked.
  6. Now take a big vessel in which the biryani gets cooked. Apply a layer of ghee inside the vessel. Now put a layer of chicken in it spread it then add the layer of half-cooked rice on it.
  7. For garnishing spread the saffron soaked into milk, coriander leaves, mint leaves and fried onion on it.
  8. Cover the vessel with a clean towel in such a way that the vessel gets airtight.
  9. Put the vessel on low heat for about 20 minutes and then keep it aside for 10 minutes.
  10. Here your biryani gets ready. Serve it with lemon and curry.
