How To Make Indian Chicken Kadai Recipe

Chicken Kadai is an Indian popular chicken dry dish and it is the perfect dish for weeknight dinners.  The recipe is famous for its rich and spiciness taste and it is invented from north India.

What is chicken Kadai?

Chicken Kadai is a spicy and flavorful  dish made with chicken, onion, tomato puree, capsicum and some spices. Chicken Kadai is a traditional Indian dish in this dish Indian whole spices like coriander seeds,  cumin seeds, peppercorns,  fennel seeds,  bay leaf and  dry red chilies are roasted in Kadai and made the fine powder and that fine powder is call Kadai masala  and that’s the reason to call this dish chicken Kadai.

Ingredients needed to make chicken kadai recipe
Ingredients for marinating
  • 250 grams of chicken breast ( cut into chunks).
  • ½ cup curd.
  • 1 teaspoon ginger-garlic paste.
  • 1 teaspoon red chili powder.
  • Salt ( as required).

 Whole spices for Kadai masala

  • 1 teaspoon coriander seeds.
  • ½ teaspoon cumin seeds.
  • 1/3 teaspoon peppercorns.
  • 1 teaspoon fennel seeds.
  • 2 to 3 bay leaf.
  • 2 to 3 dry red chilies.
  • 1 black cardamom and 2 green cardamom. 
Other ingredient
  • ½ tablespoon cooking oil.
  •  1 medium-size onion ( chopped).
  • 1 medium-size onion ( diced). 
  • 1 capsicum ( diced).
  • 1 cup tomato puree.
  • 1 teaspoon red chili powder. 
  • ½ teaspoon garlic ( crushed). 
  • ½ teaspoon ginger (grated). 
  • ¼ teaspoon turmeric powder. 
  • 1 ½ teaspoon garam masala. 
  • 1 cup of fresh cream. 
  • ½ tablespoon fresh coriander ( finely chopped).

 Step by step instruction to make chicken Kadai 

Step 1: marinate the chicken

  • Take a large bowl and then add chicken, curd, ginger garlic paste, red chili powder, and Salt ( as required).
  • Mix the chicken with all the ingredients well.
  • Cover the lid and marinate the chicken for 1 hour. 

 Step 2  preparing Kadai masala powder

  • Heat the pan on medium flame and add all dry spices like coriander seeds,  cumin seeds,  peppercorns, fennel seeds.
  • 2 to 3 bay leaf and dry red chilies.
  • Roast all the whole spices for 4 to 5 minutes.
  • Then switch off the flame and remove the roasted spices into the blender and make a fine powder.

 Step 3 frying onion and capsicum

  • Heat the pan and add diced onion and capsicum and sprinkle some oil (2 teaspoons) on it and fry it on low flame for 2 to 3 minutes.
  • Remove it from the plate and keep it aside .

 Step 3 main recipe

  • Again heat the pan and add oil once the oil is getting hot then add chopped onion and sauté it for a minute.
  • Then add crushed garlic and grated garlic and mix it well and fry it for a second.
  • After that add marinated chicken  mix it well and cook it for 5 to 6 minutes on low flame by covering lid.
  • After that add red chili powder, salt (as required)  turmeric powder, garam masala powder, and prepared Kadai masala and mix it well on low flame.
  • Then add tomato puree and fresh cream and mix it well then lastly add some water. 
  • And cook the chicken for 10 to 15 minutes or until chicken is smooth and juicy.
  • Lastly, add fried capsicum and onion mix it well.
  • Your chicken is ready to serve.
  • Remove it to the serving bowl and garnish with fresh coriander and serve it with naan or plain rice. 
Serving suggestions 
  • This delicious and mouth-watering dish serve with paratha, plain rice, roti, naan,boondi raita, onion raita, or cucumber salad.
