Ingredients Needed To Make Chicken Enchilada Stuffed Peppers
  • 3 skinless and boneless chicken breast (cooked and shredded).
  • 4 medium-size bell peppers (any color red, yellow, orange, green).
  • 1 ½ cup sliced green chilies.
  • 1 cup cilantro ( finely chopped).
  • ½ cup black beans ( drained and rinsed).
  • 1 can enchilada sauce.
  • ½ cup of frozen corn.
  • 1 teaspoon garlic powder.
  • 1 teaspoon onion powder.
  • ½ red chili powder.
  • 1 cup shredded Monterrey jack cheese.
  • 1 cup of water.
  • Salt (as required).
Toppings For Serve Chicken Enchilada Stuffed Peppers
  • Sour cream.
  • Chopped cilantro.
  • Diced avocado.
  • Diced tomato.

Step By Step Process To Make Chicken Enchilada Stuffed Peppers
  1. Firstly preheat the oven to 350 degrees.
  2. Then remove stems from bell peppers and cut in half lengthwise and remove membranes and seeds and keep aside.
  3. Then take one large bowl and add shredded chicken, green chilies, enchilada sauce, black beans, frozen corns, garlic powder, onion powder, chili powder, ½ Monterrey jack cheese, salt and mix it well.
  4. After that take one baking dish and spray a cooking spray on baking dish then pours some water into prepared pan and keep aside.
  5. Take bell peppers and stuff the chicken and enchilada sauce the mixture in it ( follow the same process to each pepper) and place stuffed peppers in a pan and top up each pepper with remaining cheese and bake it by covering with aluminum foil.
  6. Bake peppers in preheated oven for 40 minutes and then remove aluminum foil and again bake it for 15 to 20 minutes until peppers are soft and cheese are melted.
  7. Chicken enchilada stuffed peppers is ready to serve.
